The Innovation from Edel: “Inclusions”
The latest innovation from Edel: “Inclusions” are candies with freeze-dried inclusions embedded directly in the hard candy mass. The first two varieties are Inclusions Raspberry and Inclusions Ginger-Lemon. What makes these candies special is the more natural and direct flavor experience. Once in the mouth, the freeze-dried inclusions come into contact with moisture and regain their original texture and character—offering a tasting experience that feels “live and in 3D.” Inclusions Raspberry features freeze-dried raspberry pieces, while Inclusions Ginger-Lemon combines freeze-dried ginger pieces with real lemon oil. Following the positive response during and after the ISM trade fair, Edel has begun expanding the new product line. In the first series of trials, three new varieties were developed: Inclusions Strawberry, Inclusions Blueberry, and Inclusions Green Mint. The first two include freeze-dried fruit pieces, while Inclusions Green Mint demonstrates that the concept also works with freeze-dried leaves or herbs. Freeze-drying removes nearly all the water from foods in a gentle process that largely preserves structure and nutrients such as vitamins. When the “Inclusions” candies are enjoyed, the included pieces rehydrate in the mouth and deliver a real fruit sensation. Another advantage is their long shelf life.
